Meatless Monday: British Jacket Potato

I found a divine way to not eat meat.

It is in a sloppy, vegetarian bean topped, cheesy potato.

So sloppy in fact, I could not take a good picture.  I will admit, it looks kinda gross.

It. Is. Delicious.

My guy told a customer about my new meatless aspirations and she shared a delicious recipe….

that I can’t find anywhere!!

So here is the gist.

Vegetarian British Jacket Potato

Take a potatoes
Wash said potatoes
Violently stab the potatos…with a fork
Rub them down with olive oil and sprinkle with sea salt
Wrap in tin foil and bake in the oven
 
While they bake get some cheese, milk and Dijon mustard and make a sharp cheddar-like cheese sauce.  ~This is where things go foggy.
 
Warm up a can of Vegetarian Baked Beans.
 
When the potatoes are done, crack them open and mash-up the middles a bit.  Pour on a nice serving of  cheese on each potato and top with baked beans.
 

Eat.  Also, try not to finish what your children don’t.  Try but just know that I failed.

I will try to do a better job of recording my recipes in the future.  Keep in mind, there’s about a million ways to make a Jacket Potato.  Do some research and find the potato for you.  We’ve found ours.
